Bacon-Wrapped Asparagus.
September 22nd 2008 16:29
Sure, it sounds kinda weird, but it's really, really good. Use this for an appetizer or as a side - either way, it's delicious and a great spin on my favorite veggie.
You Will Need
- 1 bunch of asparagus
- Turkey Bacon (½ as many pieces as you have asparagus, cut in half)
- Olive Oil
- Salt & Pepper to taste
- Parmesan cheese for sprinkling
First, blanch your asparagus. (Bring water to a rolling boil, drop asparagus in the water and leave for about 4-5 minutes). Preheat your oven to 350º. Pull your asparagus out of the water, pat dry. Wrap a piece of bacon around each piece of asparagus. Lightly oil a baking sheet with the olive oil and lay the asparagus on the sheet. Salt & pepper to taste. Bake in the oven for about 25 minutes or so (until the bacon's crisp). Remove from the oven and sprinkle with the Parm. Ta-da, you're done!
Always,
KT
