Stuffed Butternut Squash.

I loooooove butternut squash. It smells delicious when you cook it, they tend to be pretty big and meaty, so you get plenty of it, and it can give you something a little different to try. I haven't made this since last winter, but it was incredible. (I made Calloway some butternut squash baby food last night, which is what sparked this entry!)

You Will Need
- 2 medium butternut squash
- 3/4 pounds of ground meat (beef, chicken or turkey, it doesn't matter)
- 3/4 cup chopped onion
- 1 six-ounce can of tomato PASTE
- 1/4 cup shredded mozzarella
- 1 cup cooked rice (your choice)

- 1/4 cup water

Preheat oven to 350º. Grease a shallow baking pan. Scoop seeds and stringy stuff out of the squash, place face down in the pan (meat side down) and bake for 30 minutes. While it's baking, cook your meat and onions in a pan. Drain the grease, add the tomato paste, cheese, rice, and water. Stuff the squash (when it's done baking the first time) and put it BACK in the oven for another 30 minutes.

SOOOOOO GOOD!
