Non-breaded Chicken Parm.
August 7th 2008 00:36
I LOVE chicken parm in any form, but when you're short on time and you want something to serve with your garlic bread, this is it. It doesn't take a lot of prep time or cooking. It can be altered easily to serve as many or as few people as you want. Versatility is the key!
You Will Need
- Boneless, skinless chicken breasts
- Parmesan cheese
- Garlic powder
- Salt & pepper to taste
- Olive Oil
- Pasta of any sort
- Marinara sauce
Preheat your oven to 350º. While it's heating up, slice your chicken breasts in half, as if you were going to make it into a sandwich (does that make any sense?). Put your parm on one side and put the other part of the chicken on top of it. So now you have your parm sandwiched between your two pieces.
Coat it in olive oil and add a little bit of olive oil into a casserole dish to cover the bottom. Lay your chicken in it and cover it with garlic powder, salt & pepper to taste. Bake for about 35 minutes, or until completely cooked through.
While your chicken is cooking, boil your pasta. Toss it with the marinara and add your finished chicken breast on top of it. To make it purdy, add a little fresh basil. It's easy, fast and super, super good!
Always,
KT
