Chicken Wraps!

August 18th 2008 16:20
This is family & leftover friendly. And sooooooo easily manipulated to make it what YOU want.

You Will Need
- Flour tortillas.
- Bone, skinless chicken breasts or tenderloins.
- Bottled Salad Dressing (Ranch, Honey Dijon, Italian, Asian Sesame, Bleu Cheese, whatever!)
- Some veggies, chopped/diced/ready for a 'sammich'.
- Olive oil.

You can either sautee the chicken on the stove, or grill it. If you sautee on the stove, don't use TOO much olive oil (it'll make you wrap icky and oily), just enough so your chicken doesn't get stuck to your pan. If you grill it, the same things goes, just baste once. It doesn't need to be dripping with oil. I usually season with a little bit of salt & pepper.

Spread some salad dressing on the tortilla, top with your chicken and veggies. Wrap (remember to fold the short ends in first, so it creates a 'case' for your goodies. You don't want all of your chicken and veggies to drip all over the place! Once you have it wrapped, you're good to go, OR you can sear it in a skillet on both sides for a hot wrap.

In a bind, use deli meat. You can grill/sautee your chicken the night before, stick it in the fridge and eat on it for a few days. If you're taking it to work, or sending it in someone's lunch box, wrap it in wax paper for easy transport.

Always,
KT
