Perfect for gameday!
September 16th 2008 00:13
Since football season is upon us, it means tailgating, parties, and fun afternoons spent in front of the TV (with company). This recipe makes 45-50 apps, so it's perfect for the party before the big game.
You Will Need
- 1 1/2 cups chopped, cooked chicken
- 1/2 cup finely chopped red bell pepper
- 1 envelope of taco-seasoning mix
- 12 ounces Monterey Jack cheese (get it in the block, with the peppers), shredded
- 3 tablespoons of your favorite salsa
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 50 wonton wrappers
- Vegetable oil for frying
In a mixing bowl, combine the first 7 ingredients and stir. Place 1 teaspoon of mixture in the center of each wonton wrapper. Dab a bit of water on the edges of each wrapper so they'll stick, press together to seal. Pour oil in a heavy frying skillet (2" or so of oil) and heat. Drop batches of the wontons in and fry until they're golden. Turn once. Drain on paper towels and serve! (Suggestion: offer Ranch and Bleu Cheese salad dressings, along with salsa, for dipping.)
This recipe seems like a lot of work, with the sealing and the chopping and such, but they're SOOOOOOOOO good that it's worth it. Enlist your husband, your little one, or a friend to help so you won't be in the kitchen alone.
Enjoy and remember ... GO CATS!
Always,
KT
