Lemon Baked Salmon.

This was actually the first thing I EVER cooked on my own. It was absolutely delicious. It's light, perfect for the heat of summer, and doesn't take much prepping or effort. The one thing I DO suggest is purchasing your fish fresh, not frozen.
You Will Need
- Salmon filets ... They should be 1½-2" thick.
- Olive Oil
- Some lemons (it depends on how many you're cooking ... For 2 filets, I'd use a lemon, lemon & a half.)
- Salt & Pepper to taste.
* Optional, a bit of lemon juice.
Preheat your oven to 350º. Slice your lemons pretty thin. Wash and pat dry your salmon. Coat your salmon in olive oil (if you're using the lemon juice, sprinkle it over top of the oiled fish). Salt & pepper to taste. Top salmon with lemon slices. Bake for about 20-25 minutes (until completely cooked). DO NOT OVERCOOK YOUR FISH. It will be icky.
Serve with rice pilaf and sauteed asparagus ... It's SO good!
