Sorry guys, I had a PACKED weekend and end of last week. But, I have an awesome recipe to share for my FAVORITE pasta. I love it - I know you will, too!
You Will Need
- Fresh Roma Tomatoes, diced
- Fresh garlic, sliced
- Salt & pepper to taste
- Olive Oil
- A really fine pasta (angelhair, tagliarini)
You can make the sauce a head of time and leave out for 24 hours, covered. Stick it in the fridge to keep longer.
Combine your romas, garlic, salt and pepper, and toss with enough olive oil to coat. The best part of the recipe is the fact that nothing's set in stone. Play with it to suit your tastes. If you like a lot of garlic, use it, if not, then use little. The longer it sets at room temperature, the better.
Boil your pasta. Toss with the sauce and you're good to go!
This is REALLY good cold, or the next day. It's light and refreshing, especially in the summertime!
