Quick & Easy Pasta Salad.
August 11th 2008 14:15
I made this for the 4th of July party at my brother's (he makes an AWESOME Low Country Boil for it every year) and my dad called and asked for some this past weekend. It's so easy that you all will make it and be like, "Why didn't I think of this?!"
You Will Need
- 1 pound pasta (any kind, I use angelhair)
- 1 cup of Italian salad dressing (bottled or homemade)
- 2 medium red bell peppers, sliced or diced
- 2 cups (or so) broccoli (thawed frozen or fresh)
Cook the pasta, drain WELL and rinse. Toss with the peppers and broccoli, add the salad dressing and toss until well coated. Top with Parmesan if you'd like, add a bit of salt & pepper, add some carrots and kalamata olives ... Whatever you like. It's SO good. And it lasts quite a while, covered in the fridge.
Always,
KT
