So, today was a 'rough' day in KT-dom. I went to the baby stores of all baby stores - Babies R Us (BRU) - with my mother in law (MIL) today to get a new crib for Calloway. His was recalled in the big Jardine recall, which was a total pain in my butt. After being at freakin' BRU for TWO HOURS, I walked out with a crib. Finally.
I thought I'd give you all a peak at my sweet, adorable little man before I go into my normal, food-related stuff.
Now, if that doesn't make you smile, I don't know what will.
Anyway.
Food-related ... Let's see ... How about some extremely tasty, cheap & easy Chicken-n-Rice?
Get a couple of packets of cheap wild or long-grain rice. Dollar Store brand will do.
Get a casserole dish (9 x 13) out, spray it with non-stick spray. Pour the rice into the dish (1-2 packets).
Lay your chicken breasts or tenderloins on top of the rice.
COVER IT with Lawry's Seasoning Salt, pepper, and Mrs. Dash table seasoning, add 2 cups of water and 1/2 stick of butter.
Cover with foil, bake for an hour and a half at 350. Check every so often to make sure it's not getting dry. If it is, add more water.
My aunt makes the above and it's seriously the best Chicken-N-Rice I've EVER had. So easy, SOOOOOO cheap, and so good that my niece and nephew (6 and 8, EXTREMELY picky), will eat it. You can't go wrong!
